SAKEとMESI 〜秋の顔〜

秋山はおいしいごはんが大好きなのはもちろんのこと、おいしいお酒も大好きです。もちろん、お酒単体の味も好きなのですが、料理に合わせて嗜むからこそ、料理とお酒の味がより引き立つという、SAKEとMESIの相乗効果を狙った楽しみ方がたまらなく好きなのです。お酒は、どういう温度で飲むか、どういうグラスで飲むか、そしてどういう料理と組み合わせるかで、いろいろな「表情」を見せます。お酒にどういう「表情」があるのかを知り、どう提供したらその「表情」が引き立つのか。それを日々考え、研究されている料理人の方やソムリエの方には脱帽です。秋山も、ソムリエではありませんが、出会う人の一番よい「表情」を引き出せる人間になりたい、そんな風に思うわけです。よく人の心と秋の空がたとえられますが、心だけでなく、移ろいやすい表情に一種の儚さと美しさを感じ、皆さまの秋の表情を拝見できることを、楽しみにしている次第であります。
